Delicious Vegetable Brown Rice Pilau Recipe

Ingredients

  • 2 Cups Brown Rice

  • 2-3 Tbsp Fresh Ginger, minced ( about 2 inches of ginger root)

  • 2-3 Tbsp Garlic, minced

  • 2 tsp cumin seeds

  • 2 tsp ground cumin powder

  • 3 Tbsp Pilau masala mix

  • 3 tsp salt ( or to taste)

  • 2 Tbsp coconut powder ( or 1/4 cup coconut milk / cream)

  • 8 cups hot water

  • 1/4 tsp black peppercorns ( optional)

  • 5-10 cardamom pods ( optional)

  • 1/4 cup vegetable oil

  • 1/2 cup green peas

Directions

  • On a clean tray, sort the brown rice and wash it. Set aside
  • Peel the ginger and garlic.Chop them coarsely then separately, pound them with a mortar and pestle to create a coarse mush. Set aside.
  • Place the cumin seeds, cardamom pods and black peppercorns in the mortar and add a few drops of water.Pound to a coarse mush.
  • Place the pot on the stove. You will need a medium sized pot which can take 8 cups of water with at least 1/4 of the pot with room to spare.
  • Add the vegetable oil to the pot and switch on the stove to medium heat.
  • Add the cumin seeds, black peppercorns and cardamom mix to the hot oil and stir.
  • Immediately add the rest of the dry spices and salt except the coconut powder and stir. Be careful not to let the spices burn.
  • As the spices start to brown slightly, add the minced ginger and garlic and stir. Let this cook until the garlic is tender and fragrant.
  • Add the washed rice and stir to incorporate the spices completely in the rice.
  • Add 7 cups of hot water to the rice and stir.
  • Place the coconut powder in a small bowl or cup and add the 8th cup of water to the coconut powder. Mix to create coconut milk. If you are using coconut milk/ cream, add it to 1/2 cup of water and pour it into the rice, and mix.
  • Cover the pot and let the rice cook on medium heat for about 30 minutes or until the water evaporates and the rice is plump and not chewy.
  • Add the green peas and fluff up the rice with a fork. Cover for another 5 minutes to let the peas cook then switch off the stove.
  • Serve hot with beef stew, vegetable stew, chicken korma, or other stew of your choice with a side of baked plantain or sliced ripe bananas for an unforgettable blend of flavors Enjoy!
