Fried Plantain

4 medium plantains
2-3 Tbsp vegetable oil
Pinch of salt or to taste
Black pepper (optional)

Directions
- Wash the plantain and chop of the tips.
- To peel , make a cut along the length of the plantain from top to bottom then pull back the banana peel.
- Next, cut the plantain into 1-inch slices. You can slice the plantain diagonally to get nice oval slices or keep the knife straight for rounder slices. The thinner the slices, the crispier they will become when fried so vary the thickness to your preference.
- Sprinkle the salt and black pepper. Omit the black pepper if preparing this for kids.
- Place the pan on the stove, turn the stove on to medium heat.
- Add the cooking oil and let it heat up until small bubbles start to form on the edges but not smoking hot.
- Once the oil is at the right temperature, carefully add the plantain slices to the oil with the spatula, making sure that each piece is lying flat on the pan.
- Cook them for about 3 mins or until they start to turn golden brown then flip each piece to cook on the other side. Keep an eye on the plantain as it cooks as it can burn quite quickly.
- Once the slices have cooked on both sides, lift them out of the pan and onto a plate lined with paper towels to drain off the excess oil.
- Serve hot as a side with brown rice pilau for lunch or dinner or with eggs for a delicious breakfast. Enjoy!
